Its caramel malt backbone mirrors the char on the outside of a perfectly cooked tri-tip, and there's enough hop bitterness to cut through the fat without picking a fight with the beef's natural savoriness. Los Olivos, Foxen Canyon, Ballard Canyon — world-class bottles come from vineyards less than 30 minutes from our taproom. We respect wine. Roasted beet salad with goat cheese and walnuts: This is a great moment for the Barrel-Aged Saison. Its light funk, stone fruit notes, and dry finish complement the earthy sweetness of roasted beets in a way that's genuinely surprising. Add the goat cheese and you've got magic.
